4tbChopped mint
1tsSugar
150mlBoiling water
1 Orange; juice only
1 Lemon; juice only
250mlGinger ale or soda water
6 Ice cubes
1lgSprig mint; for garnish

Put the chopped mint into a heatproof jug with the sugar and pour on the boiling water. Leave to cool, then add the freshly squeezed fruit juices. Chill for 2 to 3 hours in the refrigerator, then strain and add ginger ale or soda water, and ice cubes. Decorate with a sprig of mint and serve immediately. makes 2 to 3 large glasses.
